Приготовлено по рецепту из “Книга о вкусной и здоровой пище” 1939 г. изд.:

САМБУК ИЗ ЯБЛОЧНОГО ПЮРЕ

Яблочное пюре протереть в кастрюлю через частое сито, положить сахар, яичный белок и ванилин; все перемешать и взбивать металлическим веничком, пока масса не сде­лается пышной и белой. Намоченный желатин распустить в 4 столовых ложках воды, которую подогревать на слабом огне. В массу, не переставая взбивать, тонкой струйкой влить распущенный желатин, а потом самбук быстро разложить в формы и охладить. Отдельно можно подать соус из красного вина.На 1 стакан яблочного пюре — 1/2 стакана сахару, 10 г желатина, 1 яичный белок

Так же приготовляется самбук из абрикосового пюре.

СОУС ИЗ КРАСНОГО ВИНА

В кастрюлю влить вино и 1/2 стакана воды, положить лимонную цедру, вскипятить, добавить картофельную муку, разведенную в 1/4 стакана холодной воды, затем всыпать сахар и, не снимая с огня, помешивать соус, пока сахар не растворится. Соус подавать в горячем или холодном виде. На 1/2 стакана натурального красного вина- 3/4 стакана сахара, 1 чайную ложку картофельной муки.
