Подготовленный желатин соединить с 30 мл. воды и при непрерывном помешивании нагреть до 45—50°, а затем процедить и влить тонкой струей во взбитую массу, непрерывно и быстро помешивая веничком. Приготовленную массу разлить в формочки, охладить, а затем самбук выложить на тарелки или в вазочки.При подаче самбук из кураги можно полить ягодным сиропом.
